There is some data provided by the Ontario government, although they have recently (around March 10th) changed their categorizations. It used to be 'unvaccinated' 'partly vaccinated' and 'fully vaccinated'. Now they have lumped in the unvcd and the partly vcd together, and separated out the boosted from the fully vaccinated. But the CSV data can still be downloaded and looked through, played with, for those who know how to do that sort of thing. https://data.ontario.ca/en/dataset/covid-19-vaccine-data-in-ontario
I'm working with this data. It's daily as is their vaccination data, but you are absolutely correct they are considering 1 Dose the same as Unvaccinated. I'm probably going to make it really similar to the UK data but also make use of the daily nature.
